Dime & Quarter Packages

I'm just curious in knowing if we have a dime package or a quarter package on defense. When teams get in passing situations and put 4 or 5 receivers on the field why do we stay in a nickel all the time. Do we not have a dime package with 6 defensive backs, 1 middle linebacker, and 4 defensive linemen on the field or a quarter package with 7 defensive backs, 1 middle linebacker, and 3 defensive linemen on the field to matchup? Or am I the only one that has noticed this? Just curious.
