Do any of y'all process your own pork sausage?  If yes, what seasonings do you use–brand or family mix, if you'll give it up?

Grind gator and a little deer.  Just put some pork fat in the deer.  Nothing special because I never know how Connie will prepare it.  Seasoning is done when she preps it.

We used Black Pepper, coarse salt, Red Pepper flake , Sage , and some Chili Powder.

I believe that I read somewhere the native Americans added ground Juniper berries to make their pemmican...what are juniper berries??
