 READY IN: 25mins SERVES: 16 UNITS: US         
   INGREDIENTS Nutrition 1 lb Velveeta Mexican cheese 12 ounces cream cheese 3 fresh tomatoes, chopped 1 bunch green onion, tops only, chopped (to taste) 3 -6 jalapenos, seeded and chopped (to taste) 2 -3 fresh garlic cloves, minced 1⁄2 bunch fresh cilantro, chopped (to taste) black pepper, cracked  DIRECTIONS Melt cheeses together in microwave or on stove top. Stir in all other ingredients.

Had this at a NYE party. Highly recommend!

SMOKED QUESO

Ingredients
1 lb spicy ground sausage browned & strained of grease
1 jalapeno seeded & diced, optional
1/2 large white onion diced
32 oz block Velveeta cheese cubed
2 cans diced tomatoes with green chilies drained
1 tbsp minced garlic


Instructions
Add all of the ingredients to a (disposable) 9x13" aluminum pan.
Smoke at 250 degrees for 2 hours. Stir the queso 1/2 way through cooking.
Use pot holders to carefully remove the pan from the smoker.
Stir the dip a final time until everything's smooth and evenly combined.
Serve immediately, with chips for dipping.

Notes
Queso, especially this velveeta cheese based dip, begin to harden & congeal rather quickly. To keep it smooth & creamy for longer serving, transfer it to a slow cooker and leave it covered on the warm setting.

If you've been to Trio's in LR and liked their Spinach Dip here's the recipe.


Hot Spinach Dip
   
Ingredients
10 oz pkg frozen chopped spinach, squeezed dry
10 oz can Rotel tomatoes, drained
8 oz pkg cream cheese, softened
1/3 cup onion, chopped
1/4 cup cream
2 cups shredded Monterey Jack cheese


Directions:
In mixing bowl, combine all ingredients, blend well. Pour into a greased serving dish. Bake for 20 minutes @ 400º.

Serve with Pita Chips(Stacy's) or toasted French Bread slices.

I made this and used chorizo instead regular sausage and it was really good!

Theirs is the best. Thanks for sharing. Going to make this and add crab meat.

Captain Rodney's Dip

Ingredients

½ cup mayonnaise
8 ounces cream cheese at room temperature
2 cups cheddar cheese grated
2 whole green onions sliced thin
⅓ cup Ritz crackers crushed
8 slices bacon cooked and crumbled, or bacon bits
½ cup Boucan Pepper Glaze Captain Rodney's Boucan Pepper Glaze or pepper jelly

Instructions

Preheat the oven to 350°F. For easier mixing, allow the cream cheese to come to room temperature.
Mix together the mayonnaise, cream cheese, cheese, and green onions.
Spread in an 8 or 9-inch pie dish. Top with crushed crackers.
Bake at 350°F for 15 minutes or until heated through.
Remove from the oven and top with cooked, crumbled bacon and Captain Rodney's Boucan Glaze. Serve w/ crackers, tortilla chips.

The Glaze price has gone thu the roof...COVID I guess.

Made this with imitation crab for our Super Bowl spread. Mixed some habanero "Monk sauce" from subiaco on it. Amazing dip!
