Pork chops and sweet taters

Sliced up the rest of a pork loin for chops and then made some sweet potato stacks to go with them. Easy and pretty good.

I'm going to have to give those taters a try. Any idea if there's a reasonable substitute for the coconut oil? I thought that stuff was to be avoided?

Just use more butter.  I thought coconut oil was supposed to be really healthy? Come to think of it, I couldn't find where my wife hid the coconut oil in a jar, so I just sprayed the glass mixing bowl I was using real heavy with spray coconut oil and used more butter than what it called for.  I don't think it matters.  I just know they were good.

I'm probably wrong on the coconut. Maybe I was thinking palm = coconut.

Yeah I think coconut oil is the newest craze.  My wife buys it in plastic tubs that look like peanut butter jars.  It looks like Crisco.  I wouldn't go out and buy it just for those potatoes, though, just use extra butter or even Olive Oil mixed with butter.

I've been using both coconut and grape seed oil for years. Both good options.
