 Okay, I just tried something my mother told me about with plain old, regular old, beans. :) :)  Yes, just the thought of beans gets me going!

After you do your soak and all that, do not use water to cook the beans in.  Use instead, Chicken Broth.  White beans or brown beans this is the only way to cook beans.  According to my mom, you can use part water and part chicken broth if the straight chicken broth method is too flavorful.  Me, I like 100% chicken broth. 

May not want to salt these beans as the broth seems to add enough.

Of course you will still put in your hocks or neckbone, onions, jalapenos, or whatever you like in your beans.

This with the cornbread in a cast iron skillet is almost enough to make you die on the spot.

Sounds like a good cooking option S&S. I'll try it whenever I get home. Beans/blacked or purple hull peas with bacon are an institution.
