Catfish seasoning ideas...

I need some.

I have the old standard.....corn meal, salt, and pepper.

But I'm looking for something different.

I will be cooking 30 lbs. of fried catfish for some Yank friends on Super Bowl Sunday.

I would like some variety.

2 lbs Catfish fillets
1 cup Buttermilk
3 Tbsp Zatarain's Creole Mustard
1 package Zatarain's Crispy Southern Style Fish Fri
2 cups Vegetable oil


In medium bowl, blend together Zatarain's Creole Mustard and buttermilk. In shallow pan, add Zatarain's Crispy Southern Style Fish Fri. Dip filets in buttermilk wash and then coat evenly with Zatarain's Crispy Southern Style Fish Fri. Place breaded filets into preheated oil (350° F) and fry until golden brown. Turn one time.

Take MikeB's recipe and add a Tbsp of ground Cayenne...  BAM!

Throw in some instant potato flakes for a crispy crust.

Young's Original Fish Fry is by far the best that I have ever used.  I usually like to make my own "anything" and never buy a mix but ladies and gents this is good.  Has a good light coating with superb flavor and not a lot of corn meal crunch with a good looking red tint to it.  Oh, and it is made where else?  Right here in good ole' Arkansas for the past 60 years!
Is it any coincidence that we bleed red???  I think not!

The cayenne was a great idea....Kicks it up a notch.

Adds just enough heat to get it going...

But then again, I use Dave's Insanity Sauce on my eggs...  :)

I let my catfish soak in LA hot sauce for a hour or so, then I coat it and cook.

I know it's a little late for the Super Bowl, But try substituting your corn meal with Jiffy corn muffin mix. If it's cooked with the cayenne pepper it has an awesome sweet and spicy flavor.

Andys catfish seasoning and sacharies? creol seasoning.

Beautiful... not for kids though. very spicy.
