For me, elk is much better than deer.  Not as gamey and essentially no fat. I'd say between beef and venison. I usually add butter, especially when grilling, just to add to the flavor.  I had a blast hunting deer in Arkansas when I grew up but I'll take elk any day.  Thx for the question
