I'm getting ready for the big B-ball game which means I have to go to the store for some Velveeta and Ro-tel. If any of you have an exciting new cheese dip recipe, I'd love to have it.  What game isn't better with chips and dip?
Did you hear about the dyslexic agnostic with insomnia? He laid awake all night wondering if there really was a dog.

You can certainly doll that one up a little bit.  I've got a couple I use from time to time.  Brown a pound of hamburger and hit it with fajita seasoning and garlic, melt a two pound block of Velvetta, 2 cans of Rotel, mix all together then add a dose of cumin and cayenne pepper for your taste.  Not a bad deal and easy to do. 

If you want simple....buy a can of tamales, unwrap and crush them up and add to the block of Velvetta and 2 cans of rotel.    Melt and eat away.
I need to be more like my dog...if you can't fight it, screw it, or eat it, then piss on it.

Another option for for use with "Rotel Dip" is:

2 lbs Velvetta
2 Cans Rotel
1/2 lb Sausage (Ground up)
1/2 lb Regular ground beef
1 can of Cream of Mushroom soup

Just make as you normally would.  The mushroom soup adds a nice lille twist and helps thicken up the dip.

Add 2 tsp of LA hot sauce

that is one good recipe, i made it and man was it good.

Add a can of Pork N Beans to it and you'll have it right.

Here's another great dip:
cover bottom of pan with cream cheese
add 1 can chili over top (no beans)
cover with shredded Cheddar cheese
put in the oven for 15 mins @ 300 (just get it warm)

It's a layered dip and it is awesome.

All time best ever!!!!!! - My mom and her friends all called this CREAMY TACOS... I have no idea why, but...
Give it a try!

1lb of Velveeta
1lb of Ground Beef 
1lb or 1 package of Brick Chilli
1 can rotel (do not drain)
1 can chilli hot beans or just chilli beans (do not drain)
8 oz. Half and Half

Brown meat, add beans, then rotel, get hot, then add cheese... 
Once you get all this good and hot... Add the half & half...  DO NOT BOIL!  Just keep it hot!

This makes a great stand alone dip, but...
The original "mom's way" was to eat it like nachos...
Good tortilla chips spread out on a plate a few healthy spoonfulls of dip... Then followed with finely shreaded lettuce, diced tomatoes, and a little sour cream!  The leftovers make great chilli dogs as well!!!   
I was single handedly responsible for making my friends fat when we were in school!

Looking for a good cheese dip. Here is the famous Mexico Chiquito Cheese Dip. Most addictive dip out there, besides the dip Hitman.  ;)

Mexico Chiquito Cheese Dip

4 cups milk
1 pound Velveeta (original recipe used American)
1 pod jalapeno pepper, chopped fine
1 tablespoon catsup
1 tablespoon chili powder
1 tablespoon jalapeno pepper sauce (juice)
1 teaspoon cumin seed, whole
1 teaspoon garlic powder
1 teaspoon paprika
1/4 teaspoon dry mustard
*Thickening base:
1/2 stick margarine, melted
1/4 tablespoons flour

Mix the milk, cheese, jalapeno, and seasonings together in a saucepan. Cook over medium heat, stirring frequently (do not allow to stick).

Mix together the melted margarine and flour. Add slowly to cheese mixture. Cook until melted and thick.
I'ts Diamond Hog time YALL!

My Boys love this "meaty" cheese...

1 lb velvetta
1/2 lb ground beef
1/2 lb pork sausage
1 can of cheddar cheese soup
1 8oz jar of taco sauce
1 4oz can of sliced mushrooms (drained)

Brown ground beef and sausage.  Drain the grease and set aside.

Mix all other ingredients in a microwave safe bowl.  Heat until smooth usually takes about four minutes in microwave.  Add the browned ground beef and sausage.  Serve with corn chips. 

My Boys love it and so does my brother (HSV)!

Here is mine I call it my Nuclear Super Bowl Dip
1 2lb stick of Velveeta
1 1lb stick of Jimmy Dean Hot Pork Sausage
2 cans of Hot Rotel
you will also need some
Hot Mexican chili powder, paprika, Fiesta Fajita Seasoning and Tabasco Sauce.

In a large crock pot  melt Cheese and add Rotel. Brown sausage and drain.   Add Sausage to melted mixture and add spices listed to Taste.

I have made this for the past 8 SB parties I had and it goes quick. All These Texans I have around like it HOTT!  ;)

Ps if you want more bite add chopped Jalapenos :o

Red Pump Cheese Dip
1 stick of butter
1/4 tsp. dry mustard
3 TBSP flour
1/2 tsp. garlic salt
1 tsp. paprika, cumin, chili powder
1 TBSP ketchup
1 tsp. Tabasco
1/2 pound Velveeta
2 cups milk
Mix dry ingredients. add to butter to make a roux. cook slowly until mixed well. add milk with whisk. add velvetta. cook over low heat

Hot BBQ Chicken Dip

Ingredients
2 slices of bacon, cooked crisp and crumbled
2 cups of chopped, cooked chicken
Kosher salt and freshly cracked black pepper, to taste
1/4 teaspoon of onion powder
1/4 teaspoon of garlic powder
1/4 teaspoon of Cajun seasoning (like Slap Ya Mama), or to taste
1 (8 ounce) block of cream cheese, softened at room temperature
1 (3/4 ounce) packet of Hidden Valley Ranch Dressing and Dip Mix
1/4 cup of mayonnaise
1/2 cup of homemade or commercial barbecue sauce
1 cup of shredded cheddar cheese
1/2 cup of shredded Monterey Jack or Pepper Jack cheese
1 green onion, sliced, to garnish
Instructions

Preheat oven to 350 F. Butter a deep dish pie plate or 8 x 8 inch baking pan; set aside. Cook bacon, crumble and set aside. Toss the chicken with the salt, pepper, onion powder, garlic powder and Cajun seasoning; set aside. In a medium sized bowl, cream the cream cheese, Ranch seasoning, 1/4 cup of mayonnaise and barbecue sauce until well blended. Mix the two cheeses together and add 1 cup to the dip; stir and fold in the chicken. Transfer to the prepared baking dish. Sprinkle the remaining cheese on top.

Bake, uncovered, at 350 degrees F for 20 minutes; garnish with chopped bacon and sliced green onion. Serve immediately on a warming tray with a side dish of mixed crackers, toast points, corn chips, Triscuit crackers, tortilla chips or your favorite dipper. Reheat in the microwave, if needed, to warm.

1/3 Cup Grated Parmesan Cheese

Kraft Food & Family

Layer 1: 1 ripe avocado mixed with 1 pkg Cream Cheese (8oz), softened
Layer 2: 1 cup sour cream mixed with 2 tbsp taco seasoning (or a little less if it's too strong)
Layer 3: Mix 3 tbsp salsa with 1 ripe avocado chopped
Layer 4: 3/4 cup shredded Cheddar Cheese
Layer 5: 1 small tomato, chopped
Layer 6: 2 green onions, sliced

Layer each layer one by one in a glass pie pan. Refrigerate until ready to serve.

WARM PARMESAN CRAB DIP

1 (6 ounce) can crab meat, drained and flaked
1 (8 ounce) package cream cheese, softened
1 cup mayonnaise
1 1/2 cups grated Parmesan cheese
1 cup sour cream
2-4 cloves garlic, peeled and crushed

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
In a small baking dish, mix the crab meat, cream cheese, mayo, parmesan, sour cream and garlic.

Bake uncovered in the preheated oven 45 minutes, or until bubbly and lightly browned.

Hot Bacon & Cheese Dip

8 slices bacon, diced
8 oz cream cheese, cubed
2 cups shredded cheddar cheese
1 teaspoon Worcestershire sauce
1/4 teaspoon dry mustard
1/4 teaspoon onion salt
dash Tabasco sauce
6 tbsp half & half cream

Fry finely diced bacon in skillet until crisp; drain on paper towels and set aside.

Place cream cheese, cheddar cheese, half and half, Worcestershire sauce, mustard, onion salt and "Tabasco in the slow cooker. Set on low and allow cheese to melt slowly, stirring occasionally for about 1 hour. Taste and adjust seasonings. Just before serving, stir in bacon and serve directly from the slow cooker. If mixture becomes too thick, add more half and half to thin.

Good with sliced baguette, chips or fruit. If using apples and pears to dip, brush fruit slices lightly with lemon to prevent browning.

Artichoke Green Chile Cheese Dip

It's great when garnished with chopped green onions and tomatoes

Ingredients:
1 (14-ounce) can artichoke hearts, drained and chopped
½ cup mayonnaise
1 ½ cups grated Parmesan cheese
1 (8 ounce) package cream cheese, softened
1 (4 ounce) can chopped green chile peppers

Optional: add ½ teas. granulated garlic

Directions:
1. Preheat oven to 350 degrees F.
2. In a medium bowl, mix the artichoke hearts, mayonnaise, 1 cup Parmesan, cream cheese, and green chile peppers. Scoop the mixture into an 8" square baking dish.
Top with the remaining 1/2 cup of Parmesan.
3. Bake for 25 minutes or until bubbly and slightly browned. Serve warm.

Beer Dip
8oz cream cheese
8oz sour cream
8oz shredded cheddar
1 bag real bacon bits such as hormel or oscar mayer (or use 5 slices crumbled bacon)
1 pack dry ranch dressing mix
1/2 bunch of scallions chopped (white and green parts)
8 oz beer

Let cream cheese soften first for easier combination. Mix all ingredients, then add beer. Stir well. Consistency will be thin. Cover and refrigerate 4 hours to overnight (best). Dip will thicken up to the perfect consistency.

Chipotle-Spinach dip

2 10-ounce packages frozen spinach, thawed and drained
8 ounces cream cheese, at room temp
1/2 cup mayonnaise
1/2 cup sour cream
1/2 cup sliced scallions
1/3 cup chopped cilantro
1 tablespoon chopped chipotle in adobo sauce, or more to taste
1 tablespoon freshly squeezed lime juice, or to taste
3/4 teaspoon kosher salt, or to taste
Freshly ground black pepper
Tortilla chips, for dipping.

1. Squeeze spinach tightly in a clean dish towel to remove excess moisture.
2. In a food processor, puree together all ingredients except spinach until smooth. Pulse in spinach until just combined. Taste and adjust seasoning, if necessary. Serve with tortilla chips.

Neiman Marcus Dip

5 - 6 green onions
8 oz. cheddar cheese, shredded
1 1/2 cups mayonnaise
1 jar Hormel Real Bacon Bits
1 pkg. slivered almonds

Chop the green onions.
Shred the cheddar cheese.

Mix the onions, cheese, mayo, bacon bits,
and slivered almonds together.
Chill for a couple hours.
Serve with Ritz crackers or corn chips.

My family's favorite. 
7 layer dip

Use a Glass baking dish to layer this in

Bottom layer- One large can of re-fried beans spread evenly
2nd layer- 16-24 oz container of sour cream spread on top of beans
3rd layer- 2lbs of ground beef browned, drained and seasoned with taco seasoning
4th layer- 1 jar of your favorite salsa poured over ground beef
5th layer- 2 bags of shredded cheese
6th layer- lettuce
7th layer- tomatoes

This stuff never last long at our watch parties

This one's simple and good.
Collard Greens & Artichoke Dip
1 pkg Frozen collard greens (or turnip greens or spinach)
1 jar 6.5 oz marinated artichoke hearts, drained, chopped
¾ cup mayonnaise
4 – 5 cloves garlic, minced
½ tsp Worchestershire sauce
½ tsp Hot pepper sauce
1 Serrano pepper, chopped
1 ½ cups Mexican shredded 4 cheese blend

Heat oven to 350
Combine ingredients in baking dish
Bake 20 minutes

Dust top with Tony C's and bake till it bubbles along the edges and the Cream Cheese top gets some color.  Remove and serve hot or let it cool and serve later.

Spinach Artichoke Dip with Cheese
1 can (14 oz.) artichoke hearts, drained, finely chopped
1 pkg. (10 oz.) frozen chopped spinach, thawed, well drained
3/4 cup KRAFT Grated Parmesan Cheese
