Ingredients For The Pineapple Ham And Cheese Fatty

Basic Ingredients
Jimmy Dean ground sausage
Thick sliced Bacon

Stuffing Ingredients
canned pineapple bits or grilled fresh pineapple chopped
diced ham
cubed cheddar cheese (I like mild)

optional stuffing ingredients
sliced black olives
red pepper flakes

Follow Instructions above. You can stuff or roll this one.

*For a twist you could try using a sweet glaze on the outside of the bacon on the fatty.



This Mexican Fatty Is Caliente! (Hot)

Ingredients For The Mexican Fatty

Basic Ingredients
Jimmy Dean ground sausage
Thick sliced Bacon

Stuffing Ingredients
chorizo (mexican sausage)
pepper jack cheese cubed
bellpepper
onion
minced garlic

optional stuffing ingredients
jalapeno peppers
hot sauce

Follow Instructions above. You can stuff or roll this one.

*For a twist you could top with queso after cooking


Breakfast Fatty
A yummy breakfast fatty!



Basic Ingredients
can of corned beef hash in place of the jimmy dean sausage
Thick sliced Bacon

Stuffing Ingredients
mild cheddar cheese
sliced mushrooms
black olives

Follow Instructions above. You can stuff or roll this one.

~Serve With: grits, toast, and eggs or mix everything up in a bowl for a fatty breakfast bowl.

I'm anxious for the farmers market to get cranked up again, but it's a long time before I can get my favorite....okra!

I love fried okra, but after breading it, I've started putting it in the oven, on a cookie sheet, on broil for a few mins and then try to flip it as best I can. It will turn dark some like fried, but no oil. You really get to taste the okra a lot more.

I've made a few fatties now. They're really good but the ground beef/sausage ends up a solid chunk of gutbomb. I use the gallon ziploc bag to make the meat patty and know I'm compacting it too much but don't know a better way. Have considered mixing in bread crumbs like with meatloaf. Any ideas to keep the meat a little less dense?

A sleeve of Sunshine Saltines will do the trick.
