BR's Basic Stuff for Jambalaya (Last night 3 men said it was the best they have ever had, and they know food)

Big Cooker Then start to work

8 Peppers Diced (I use 2ea of Red, Green, Yellow, Orange)
4 Red Onions Diced
2 things of Celery Diced
2 Big Spoons of Diced Garlic
Sweat all of this together in Butter
Add a bunch of chicken stock & Cajun Seasoning
4-5 cans Rotel
12 Chicken Thighs Smoked or grilled
12 Andouille Sausages Grilled
4 pounds or more of Large Shrimp
2 pounds Crawfish Tailmeat
A bunch of rice
Some good French Bread to sop up Juice
Mix all together and let simmer for hours, sorry not more informative. That is how I cook, I just add stuff till I know it's right. Trust me I can make great Jambalaya... Sandy Schimmel Horseman, next time I make it we will have you up to watch...

Back at you BR!  We've got grandkids coming in tonight and they wanted to try my grilled oysters.  The Wolfman and I road tripped to Shreveport yesterday, a 644 mile round trip and bought 60 pounds of oysters and 4 pounds of big shrimp.  We've got that plus crab legs and lobster for supper tonight with homemade peanut butter pie for dessert.  Going to eat well.  These oysters I bought had a harvest date of 12/18 and that's about as good as I'm going to get up here. Tried them last night and they are good.
I need to be more like my dog...if you can't fight it, screw it, or eat it, then piss on it.
