I'm looking for a good vinegar based sauce as well as a mustard sauce for pork bbq.  Anyone have any good ones they want to share?

Buff

Try this one for sammiches.

1 cup Karo corn syrup
1 cup white vinegar
1/2 cup water
3 tablespoons ketchup
2 tablespoons sugar
1 tablespoon molasses
1 1/2 tsp. pectin
2 tsp prepared yellow mustard
1 tsp salt
1 1/2 tsp ground black pepper
1 1/2 tsp red pepper flakes
1/2 tsp paprika

Probably not exactly what you're looking for, but it's one I got from a book that I mix up for myself every time I make bbq.  My family likes the ketchup-based sauces more so I get this one all to myself.  Not many ingredients so it's easy to modify to your liking too.

Guinness Snout

here one that i like.  it's kinda spicy and not real sweet.
This make about 1 gallon and a half.

3-24oz  catsup
empty into a large stock pot
refill the catsup bottles with water and empty
1qt. vinegar.  I like apple cider, but you can use white vinegar

1-4oz box black pepper
sometimes I like using 2oz of white pepper and 2oz of black pepper
1-4oz chili powder
1-4oz garlic salt (not powder)
1/2 c.  sugar
1 small bottle of tabasco
1 small bottle of yellow mustard

mix together the wet stuffand bring to a simmer.
now, dump in the dry stuff
simmer for 30min.  :razorback:

OK...  here are a couple of good ones...

Vinegar Sauce (North Carolina Style)

1 Cup Water
1 Cup Cider Vinegar
1/2 Cup Ketchup
1 TBSP Sugar
3/4 TSP salt
1/2 TSP Red Pepper Flakes

Whisk until it is all blended...

Note: This is a Traditional North Carolina Sauce and it is NOT what we in Arkansas usually call BBQ Sauce...  Good on Pork though!

South Carolina Mustard Sauce

1/2 Cup Yellow Mustard
1/2 Cup Light Brown Sugar (packed)
1/4 Cup White Vinegar
2 TBSP Worcestershire
1 TBSP Hot Sauce (I like Frank's)
1 TSP Salt
1 TSP Pepper

Whisk until it is blended...

Also good on Pork...

1/2 Wickers 1/2 Kraft... a lot of oldtimers around here (NE Ark/SE Mo) will tell you that is all you need... ever
