Anyone got a good recipe for Texas Chili?

I'm not talking ground beef and beans.  I want to make an authentic bowl of Texas Red.

Chili does not have beans in it.  Armadillo tail...ok, but no beans!

It doesn't have tomatoes in it, either.

It is all good with Fritos

Can't prove it but beans got added IMO to streach the meat so you could feed more folks.

In my house anything called Texas anything, we change the name to southwest.
