Anyone got a good recipe for Texas Chili?

I'm not talking ground beef and beans.  I want to make an authentic bowl of Texas Red.

google terlingua chili cookoff and they have the recipies from that years winner. some great ones in there.

Can't prove it but beans got added IMO to streach the meat so you could feed more folks.

Tuck Fexas!
In my house anything called Texas anything, we change the name to southwest.
