Two years back, a poster suggested adding cayenne pepper to my recipe.....and it was a great idea.

I'm frying 25 lbs. of catfish today for all my Chicago friends for a Super Bowl party....

Any other recipe ideas?

I generally don't mess with what works.....but with 25 lbs.....I feel the need to experiment a little ;)
