I'm looking for a solid quality knife set. What do you recommend?

Zwilling JA Henckels 4 star have always served me well.

Me too, great knives make kitchen life a lot easier and these are great

I would just buy one at a time instead of a set.  You might like a Shun chef's knife and a wusthof filet knife or something like that.  Different knives feel differently in your hand and the odds of you liking every knife in a single set aren't that high.  Go to a store and hold the different brands (they do sell them individually) and see what feels good in your hand.  Most people only use about 3 of the knives in a set on a regular basis.

Just get a set of Old Hickory.

My sister got me a Shun chefs knife for Christmas a few years ago and the damn thing is so sharp I'm scared to use it.

What are you looking to spend.  I have some great German, Finnish, and Japanese knives, but they are pricey.  Argentina is an up and comer, use German engineering for some brands.

Nice knives for sure. I have a couple of these.
I also use a Grohmann but the knives I use the most are some Chicago Cutlery knives for slicing and for bigger stuff some Case Old Forge that I bought 40 years ago. I use an Ulu for chopping. Ever use an Ulu?

I own a few Ulus, they are great knives.  I met a native in Alaska that taught me Ulu self defense.  They are bad ass weapons in the right hands.

Run down to Fayetteville Restaurant Supply and look through theirs and find something that fits your hand.  Nice inventory of different knives to look at.

I just got the Shun Chef's knife for my birthday last month and the paring knife for our anniversary this month. I like where this is heading, just need a few more holidays. I can't believe the difference between good knives and great knives. I was sold on German steel until I started using these. Highly recommended!!

jacobp

Different blades for different jobs. My 6 and 8" shun premier blades are great for slicing, dicing, generall cutting with a rocking motion but for chopping/boning or anything more heavy duty you will benefit from a heavier steel.

In Japan, the hand can b used like a knife.

Case still makes a nice set but tons of folks I know use the German Zwilling JA Henckels.

Simply put, buy German.  Steiger has a very nice set right now, but it is pretty expensive.  The Japanese make nice cutting blades as well.
