With the cheating at Ole Miss put asunder, who actually stands a chance of beating Alabama? So far, the only ones I can say could give Bama issues is LSU and Auburn and that's only because those are rivalries.

You miss the boat.  A four team playoff is a championship.  A championship produces... a champion. You seem to be looking for the "best" team.  The "best" doesn't exist. Best does not equal champion.  Best is a myth.
Opinion polls produce... opinions.

Alabama will be very good as long as Jalen Hurts stays healthy.  The roster shows 3 Freshmen and 2 Sophomore QB's behind Hurts.  None of htem have any SEC game experience.

David Cornwell, redshirt junior Cooper Bateman, and Blake Barnett, who actually started Alabama's opener against USC, all transferred to other schools in December of 2016.

They could be in a world of "hurt" (pun intended) if Hurts goes down.
Good luck to ALL of our Razorback teams!!

ESPN's FPI rating gives them only a 10% chance of going undefeated.
If we consider them unbeatable before we ever play then why risk injury playing or waste time watching?  Yes there are 6 other teams in the West who can stop Bama. Will they?  Well, that's why we watch.
